Ingredients:
- Bottle Gourd (Sorakaya): Half, peeled and cut into cubes
- Ghee: Amount not specified (use enough for frying)
- Garlic: 3-4 cloves
- Cumin Seeds (or powder): 1/2 teaspoon
- Onion: 1 medium, fully chopped
- Peppercorns (or Pepper Powder): 3-4 corns, or equivalent powder
- Fresh Coriander: A handful (for cooking) + extra (for topping)
- Oil: 1 tablespoon (for the final step)
- Water: (for pressure cooking)


Phase 1: Sauté and Pressure Cook
- Heat the Aromatics: Add a small amount of ghee (about 1 tsp) to a pressure cooker on medium heat.
- Add the garlic, cumin seeds, chopped onion, peppercorns, and a handful of fresh coriander.
- Sauté and fry for 4-5 minutes until the onion is translucent and the spices are fragrant.
- Add the cubed bottle gourd and a sufficient amount of water (just enough to cover all the ingredients).
- Close the lid and pressure cook for 2 whistles. Turn off the heat and let the pressure release naturally.




Phase 2: Blend and Finish
- Separate and Blend: Once the pressure is fully released, separate the cooked bottle gourd pieces from the cooking water. Reserve this water—it’s full of flavor and nutrients!
- Blend the cooked vegetables into a thin, smooth paste. Use a hand blender or a mixer/grinder.
- Final Simmer: Add 1 tablespoon of oil to a separate pan (this is for tempering/finishing). Add the blended paste and the reserved cooking water.
- Add salt to taste. If the soup is too thick, add a little more regular water until you reach your desired consistency.
- Stir and cook gently for 5 minutes to allow the flavors to fully combine


Phase 3: Serve
- Pour the light and healthy Sorakaya Soup into bowls.
- Top generously with fresh coriander and a final dash of freshly crushed pepper, if desired. Serve hot!
